These are wholesome but yummy enough to make them a treat if you’re trying to cut down on fat and refined sugar and processed junk food and still craving an afternoon snack. They take about 10 minutes to throw together and I make them often for my family – even though they’re not off sugar like me. In the video this week, I didn’t have pear and made them with three mashed bananas instead. This also works and is slightly sweeter.
INGREDIENTS
3 eggs
1/2 cup olive oil
1/2 cup natural sugar-free yoghurt
2 teaspoons vanilla
2 tablespoons soaked chia seeds
1/2 cup dark unsweetened cacao powder
2 teaspoons baking powder
1 1/4 cups wholemeal flour
2 teaspoons cinnamon
2 1/2 cups chopped ripe pear
METHOD
- Preheat your oven to 180 degrees C.
- Mix all the wet ingredients (except pear because then I find it breaks down too much) with a spoon – eggs, olive oil, yoghurt, vanilla, chia.
- Sift in the cacao, cinnamon and baking powder.
- Add the flour (I don’t sift because it’s wholemeal and I’d lose all the texture) and stir until all is just combined. You don’t want to overmix muffins.
- Stir in the chopped pear and spoon into muffin cases.
- Bake for 10-15 minutes but just keep an eye on them. When you see that the tops are crisp and erupting a little in the centre, this means they are usually done. I like to take mine out earlier rather than later. They will be fragile to eat while hot but once they cool down, they remain moist, whereas if you take them out too late, they are easier to eat hot from the pan but tend to be a little dry. Enjoy!
